Oh! So Lent is over, and I am free to drink again. Hooray! And I did so with great gusto yesterday, when S____ & I hosted an Easter Cocktails Bash, which was supposed to be from two to four in the afternoon, as it featured brunchy drinks, but of course it lasted much, much longer. I made Ramos Gin Fizzes (good, but not quite ropy enough in texture), Absinthe Suissesses (successes!), and French 75's (seven bottles of champagne worth). I had never made Absinthe Suissesses before & to be honest, I thought they might be terrible, but they were such a hit I really need to record the recipe that I used for future reference.

Absinthe Suissesse (makes two)

2 ozs. absinthe
1 oz. French vermouth
¼ oz. simple syrup
1 egg white
½ oz. white crème de menthe
2 ozs. soda water

Mix the absinthe, vermouth, simple syrup, and soda water in a mixing glass. Drop in the white of an egg. Fill the glass with cracked ice and shake vigorously. Strain into a champagne glass in which there is a cherry with crème de menthe poured over it.

The whole egg thing does sound a bit dodgy, doesn't it? I made pink ladies for one cocktail party with the full intention of trying one, but the effect of mixing in the egg white had such a repellent effect I was ultimately unable.

Nooo, egg whites make drinks light & frothy! You just have to shake, shake, shake like mad. And in general, I have found that guests willing to drink absinthe aren't scared off by a little raw protein (and besides, salmonella from eggs is virtually unheard of in California).

I'm going to save this recipe since Stacy's coming home from Spain with two bottles of Absinthe!
Though I tend to not like drinking egg whites, I suppose I'll give it a go.

So sad I missed it, but hey, helping A&R pack got me two free paintings, two of my FAVORITE paintings even!

It used to be impossible to get in the U.S. and it's still illegal here, but it seems like the Internets really do make some things easier.
